Sulla Honey
The sacred legume of the Sardinian countryside
Sulla (Hedysarum coronarium) carpets the Sardinian countryside in red every spring.
It is the symbol plant of traditional Sardinian agriculture, cultivated for centuries as fodder and as a nectar source for bees. Its honey is among the most appreciated in the island's beekeeping tradition: it crystallizes very finely, almost like a cream, with clean sweetness and a delicate floral note reminiscent of vanilla and freshly cut hay.
Harvested between April and June, when the hills of Campidano and Logudoro turn purple, this is the honey of Sardinian spring abundance. There is nothing like it anywhere else in the world.
Sweet and delicate, floral with notes of vanilla and hay. Crystallizes finely creating an almost buttery creamy texture.
