Asphodel Honey
The flower of the Nuraghes, immortal symbol
Asphodel (Asphodelus microcarpus) is the flower of the dead in Greek mythology, but in Sardinia it is the flower of life.
The Nuragic people used it for everything: making baskets, producing wine, feeding animals. Its stems rise tall from the still-damp meadows of late Sardinian winter, white and majestic, like sentinels of the coming season.
The honey produced by bees foraging on asphodel is among the most delicate and rare: almost white, with a mild and floral flavor, it crystallizes so finely it seems like honey cream. It is perhaps the least known Sardinian honey outside the island, and for this reason the most authentic — still unknown to the mass market, still kept among traditional beekeeping families.
